I love crumble. In fact I have a separate compartment in my tummy, which means that although I may be stuffed after dinner I can always make room for crumble. I also love granola. So why not combine the two to make a tasty and quick breakfast that you make in advance. We’ve used apples and the forced rhubarb I bought at the end of January and chopped and stored in the freezer, but feel free to use any fruity combinations.
1. Begin by making a batch of granola. Choose from either of our two favourite recipes here and here. You’ll never buy shop bought granola ever again. The key will be knowing how to stop yourself polishing off a whole jarful!
2. Pre heat the oven to 180C. Next chop three stalks off rhubarb into small chunks and peel and core two apples and chop into chunks. Divide the apple and rhubarb chunks between six small ramekin dishes.
3. Top the fruit mixture with four good tbsp. of homemade granola and bake in the oven for 25 minutes. Serve with a dollop of yogurt. Could not be easier than that.
