Apple & Nutmeg & Muffins…


I’m still continuing the autumnal baking theme, making  the most of this season’s rich pickings. And this Sunday the spotlight is on the humble apple, which is another great seasonal ingredient for baking with and again a hit with children who can roll up their sleeves and will love getting involved in the action, stirring up messy homemade memories. Perfect Sunday baking inspiration.


1. Begin by preheating the oven to 180C and you will need to grease 12 cup cake cases with a little butter or use silicon cases.

2. Into a bowl add three cups of spelt and rye flour, 1 cup of soft brown sugar, 1 whole nutmeg grated, and 1tsp. of baking powder. Add one large apple grated, 1 cup of sultanas and mix everything together.

3. Next crack 2 eggs into the mixture, one at a time and fold together before finally adding in one cup of full fat milk and stir all the ingredients together.

4. Divide the mixture between the 12 cases. Slice one apple into 6 discs and halve each disc. Place each half disc on top of the mixture in each case and sprinkle a little brown sugar on top.

5. Bake in he oven at 180c for 30 minutes.
