Lemon Curd Posset…

It’s been one of those weeks! And to be honest cooking has been the last thing on my mind, especially this weekend as London has been having a mini heat wave. The last thing you want to be is stuck in the kitchen when it’s super hot outside. These are rare occasions. 

However for a super quick, and I mean super quick, pudding idea, which children could do from start to finish, this recipe for lemon curd posset is a winner. It’s also the perfect way to round up the week without any hassle or faffing.

It does come with a warning however. You won’t be able to resist licking the bowl!

1. Whisk 300ml of double cream, using your electric whisk until soft peaks form. Keep a careful eye on it as this won’t take long. 

2. Transfer the cream into a bowl and add 4 tbsp. of good quality lemon curd and gently fold the two ingredients together. 

3. Finally stir in the zest of one lemon and divide the mixture between four small jars. Top each jar with a couple of cherries and leave to chill in the fridge for a couple of hours. Nothing else to it!
