By experimenting a little in the kitchen I’ve created these delicious peanut butter and blueberry cookies, great if you’re after some weekend or half term baking inspiration. The saltiness of the peanut butter works wonders with the sweetness of the blueberries, to create a juicy, goey and chewy snack time treat, which is a cross between a cookie and a rock cake.
What’s more they only take minutes to whisk up and no time at all to bake. And best of all little hands can get involved too. You’ll have to be quick to get your hands on one however, as bigger appetites in our house like these cookies a lot!
2. In to your blender add 1/2 cup of ground almonds, 1/2 cup of cashew nuts, 3 generous tbsp. peanut butter, 3 generous tbsp. runny honey and 1 tbsp. vanilla essence. Blend until you have a firm but soft cookie dough.
3. Fold in 1 cup of blueberries and using your hands make six good sized ball shapes and place on a baking tray. Gently flaten the cookie dough down slightly using a fork and bake for 10 – 15 minutes at 180C.
