Peanut Butter Flapjacks

Bold statement, but these could be the best flapjacks I’ve ever baked. I love them, the Chief Taster loves them, leaving me only two pieces to enjoy from the first batch I made! If I could make industrial size batches and box them up to sell to Waitrose in an attempt to make my fortune, I would.

They are super easy to make,take no time at all to whisk up and it’s another great recipe to get children involved in, if you’re after some Sunday bake off inspiration.

 
1. Begin by preheating the oven to 180c and grease a square cake tin with butter or coconut oil.

2. Into a pan add 3 good tbsp. coconut oil, 4tbsp. runny honey, 4tbsp. maple syrup, 3 good tbsp. of smooth peanut butter and heat over a low heat on the hob until all the ingredients have melted and you have a runny liquid. Take off the heat.

3. Next add 3 cups of oats, 1 cup of chopped dried prunes and 1 cup of sunflower seeds into the hot liquid and mix all the ingredients together.

4. Finally transfer the mixture into the square tin, ensuring all the ingredients are packed in well. Bake in the centre of the oven for 25 – 30 minutes, until golden brown. Leave to cool before cutting.
