Banana Flapjacks

I love to snack, but I do try and avoid the biscuit tin and reach for the fruit bowl. However if an apple or an orange isn’t quite going to hit the mark then my banana flapjacks will do just the trick. Packed with fruit, chopped brazil nuts and juicy dried prunes, I reckon they could also make really good breakfast bars if you’re caught on the hop in the morning and don’t have enough time for breakfast.

They are also definitely a healthier alternative when you’re after something a little moreish for your 11 o’clock coffee break and mums, the kids won’t be disappointed either. I’ve tried and tested these flapjacks on four of my nieces and nephews!


The Ingredients…

150g rolled jumbo oats

50g chopped dried prunes

50g chopped brazil nuts

200g of mashed banana

3 tsp. of Agave syrup

50g soft brown sugar

The Baking Bit…

1. Pre heat your oven to 180C and grease a baking tray.

2. Mash the banana into a glass bowl and add in the chopped prunes, along with the agave syrup and the chopped brazil nuts. Combine all the ingredients together.

2. Next add in the oats and then finally the sugar. Again mix everything together and if the mixture is a little dry add in a couple extra squirts of the agave syrup.

3. Fill your baking tray with the mixture and bake in the oven for 15 minutes. Leave to cool before slicing into squares. Quick and easy. Enjoy!
