The sunshine, coupled with work and of course wedding planning, have all managed to get in the way of blogging lately. However with a trip North planned tomorrow to visit my good friend and “maid of honour” Rachael and of course baby Bella, I’ve whisked up a treat.
I love dark chocolate and I love avocado. However you might think the two don’t really go hand and hand. Think again! This combination is a taste sensation. The avocado creates a really moist texture and the chocolate will nail every craving on its head. Although I don’t think you’ll be able to resist just having one of my scrumptious chocolate and avocado brownies. I bet you’ll be back for ‘just’ one more.
1 large ripe avocado
150g of dark (over 70%) chocolate chips
100g self raising flour
1 large egg
70g caster sugar or Xylitol (if you’re feeling healthy!)
1/2 tsp. vanilla essence
The Baking Bit…
1. Pre heat the oven to 180C and melt the dark chocolate chips in a glass bowl in the microwave for about 30 seconds.
2. Sift the flour into a separate glass bowl, add in the melted chocolate, plus the egg and whisk the mixture together using a wooden spoon.
3. Then add in the sugar along with the mashed avocado and again beat everything together along with the vanilla essence until you have a lovely smooth mixture.
4. Pour the mixture into a greased baking tray and pat down into all the corners using a spatula. Bake in the oven for 15 minutes. Leave to cool before slicing into large squares. To be eaten with friends alongside a large pot of tea.
